Italian Cooking PART 1: Get Ready for the Lesson!

As you probably know if you’ve read our Newsletter, we are preparing a new Section for you: The Italian Cuisine & Recipes! But to be ready to cook like an Italian and to read the real Italian recipes, there are terms you need to know. Not just terms, but also our measurement system, which is probably different from yours.

Are you ready to start thinking in Grams (Gr.), and Liters (L.)?

It’s time to enter in an Italian Kitchen and discover the Italian names of all the tools you’re going to use and much more!

What I should use?

  • BICCHIERE: glass
  • COLINO: strainer
  • COLTELLO: knife
  • CONTENITORE: container
  • COPERCHIO: lid
  • CUCCHIAINO (DA CAFFÈ): teaspoon
  • CUCCHIAIO: spoon
  • CUCCHIAIO DI LEGNO: wooden spoon
  • FORCHETTA : fork
  • FORNELLO: stove
  • FRUSTA: whisk
  • MESTOLO: ladle
  • PADELLA: frying pan
  • PELA PATATE: potato peeler
  • PENTOLA: saucepan
  • PENTOLINO: small saucepan
  • PIATTO FONDO: soup plate
  • PIATTO PIANO: dinner plate
  • SCODELLA/ CIOTOLA: bowl
  • SCOLAPASTA: colander
  • TAGLIERE: chopping board
  • TEGLIA: casserole

To do what?

  • AFFETTARE: slice
  • AGGIUNGERE: add
  • BOLLIRE: to boil
  • CONDIRE: season
  • CUOCERE A FUOCO ALTO: cook over high heat
  • CUOCERE A FUOCO BASSO: cook over low heat
  • CUOCERE AL FORNO: bake/roast
  • FRIGGERE: fry
  • IMPASTARE: knead
  • MESCOLARE: blend
  • MISURARE: measure
  • MONTARE A NEVE: beat until stiff
  • PORTARE A EBOLLIZIONE: bring to a boil
  • SALARE: adding salt
  • SALTARE: toss
  • SOFFRIGGERE: sautè
  • ROSOLARE: brown lightly, sauté
  • TAGLIARE A CUBETTI: cut into cubes
  • TRITARE: chop up

Oz., Pounds, Grams, Liters...What a Mess!

1 grammo (Gr.) = 0.035 ounce
100 grammi =1 Etto (Hg) = 3.5 ounces
1000 grammi = 2.2 pounds
1 kilogrammo (Kg)  = 35 ounces
1 kilogrammo = 2.2 pounds

1 ounce = 28.35 grams
1 pound = 453.59 grams


1 millilitro (mm) = 0.03 fluid ounce
1 litro (L) (1000 mm) = 34 fluid ounces
1 litro (1000 mm) = 2.1 fluid pints
1 litro (1000 mm) = 1.06 fluid quarts
1 litro (1000 mm) = 0.26 gallon

1 gallon = 3.8 litri
1 teaspoon = 5 mm
1 tablespoon = 15 mm
1 fluid ounce = 30 mm
1 fluid cup = 236.6 mm

And what about...Temperatures?

32F = 0C
40F = 4.4C
100F = 37.7C
200F = 93.3C
225F = 107.2C
250F = 121.1C
275F = 135C
300F = 148.9C

325F = 162.8C
350F = 176.7C
375F = 190.6C
400F = 204.4C
425F = 218.3C
450F = 232.2C
475F = 246.1C
500F = 260C

Can I add a couple?
Saltare = toss (i.e. pasta with sauce in a skillet over the flame)
Rosolare=brown lightly, sauté
Keep up the good work! We do cooking classes and weddings and someetimes it's hard to know how to translate some technical terms.
